Cornbread

1 1/3 cup honey
1 1/2 cup buttermilk
2 eggs
1 1/2 cup corn meal
1 1/2 cup unbleached flour
1 Tablespoon baking powder
3/4 Teaspoon baking soda
3/4 Teaspoon salt
4 1/2 Tablespoons melted butter
  • Preheat the oven the 425 degrees F
  • Grease a larg cast iron skillet or cake pan
  • Beat together the honey, buttermilk, and eggs
  • Mix together the dry ingredients
  • Combine all ingredients, inluding the butter and pour into the hot skillet
  • Bake about 20 minutes, or until done
